I love fried pies.

Here is the recipe for fried potato pies prepared with love.

Ingredients:

- 350 g of warm water or milk

- 35-40 g of sugar

- 20-25 g of fresh yeast

- 520-540 g of flour

- 10 g of salt

- Oil for deep frying

Preparation:

Dissolve sugar and yeast in warm milk (no higher than 38 degrees).

Let it stand for 10 minutes to activate the yeast.

Add sifted flour and salt and knead the dough.

I needed 520 g of flour to get a soft dough that sticked to my hands a little. You may need more, depending on its quality.

Leave the dough in a warm place for about 45 minutes to rise, knead it again, and let it rise a little more. Then form the balls (15-18 pieces (depending on the desired size)).

  • Press the formed balls several times to make them flat, put the filling on top (like boiled potatoes with butter, but stewed cabbage or pea puree will be great too). About 40-45 grams will be enough.
  • Form the pies, pinch the edges well, and press them down a little more to make them flatter. Let them rise for another 20 minutes to make them puffy!

Meanwhile, take odorless vegetable oil and bring it to 180 degrees. If you don't have a thermometer, throw a piece of dough into the oil and check how it will fry.

Carefully take each pie and put it in the oil. Fry them for about 1-1.5 minutes on each side until they turn beautiful golden brown. Put on a paper towel to absorb excess fat.

Tips:

You can also fry with little oil - then the pies look a little different, but are still very tasty

Do not make the dough too liquid - it sticks to the surface and absorbs a lot of fat during frying.

On the contrary, too thick dough will not be fluffy and juicy.

Be sure to let the dough rise well before frying.

A warm place can be an oven with a glass of boiling water.
