Juicy baked pork rack: the perfect dish for a festive table

A recipe for juicy baked pork rack in the oven, which will be perfect for a festive table.
Ingredients:
- Pork rack - 1.5-2 kg;
- Balsamic cream - 3 tbsp;
- Olive oil - 2 tbsp;
- Rosemary - 2 sprigs (or 1 tsp dried);
- Paprika - 1 tsp;
- Salt, pepper - to taste.
Step-by-step recipe:
1. Preparation of meat:
- Remove the film from the rack.
- Clean the bone.
- Make cuts on the meat part to allow the spices to penetrate better.
2. Marinade:
- Add all the spices and oil directly to the meat.
- Thoroughly coat the meat with the mixture. Leave to marinate for 2-3 hours in the refrigerator (or better overnight).
3. Baking:
- Preheat the oven to 200°C.
- Place the meat on a baking sheet lined with parchment or foil with ribs down.
- Cover the meat with foil and bake for 40 minutes.
- Remove the foil, reduce the temperature to 180°C and cook for another 30-40 minutes, periodically basting the meat with the juices that are released. This will make the dish even juicier and give it a golden crust.
4. Serving:
- Before serving, let the meat "rest" for 10-15 minutes to allow the juices to distribute evenly.
- Cut into portions and garnish with fresh greens or cranberry sauce.
You can also add eggplant, peppers, and red onions, and then use the same vegetables as a great side dish.
