Soft homemade cookies with jam: just melt in your mouth

Possibly the most soft cookies.

I love cooking with my mom - it's important for me and I enjoy it very much.

Ingredients:

- 200 g of 82.5% butter.

- 10 g of vanilla sugar

- 85 g of powdered sugar

- 1 large egg (60 g)

- 240 g of flour

- 30 g of corn starch

- 5 g of baking powder if desired

150-180 g or pieces of fruit from jam or thick jam.

Beat soft butter with powdered sugar well with a mixer until the mass is white. Add a whole large egg - 60g or 60g of whites, and beat for a couple of minutes.

(If the egg is small, then take a whole egg and 1 yolk)

  • Mix flour with starch and baking powder and sift through a sieve (if you don't have starch, you can replace it with flour).
  • Add flour to the whipped butter in several stages.

Stir lightly and for a short time.

You can do this with a food processor or just by hand!

  • Transfer the dough to a pastry bag with a wide star nozzle. Squeeze on a baking sheet covered with parchment, an make a depression in the middle of each cookie with a finger dipped in water. Fill with jam of your choice.

Don't forget that there should be 2-3 cm of free space between the cookies so that they don't stick together!

  • Bake at 175-180 degrees for 15-18 minutes

The cookies should be nicely browned - keep an eye on your oven as you don't need to keep them in for too long.

When they cool down, you will be very surprised by how soft they are!

  • It may be hard to squeeze the dough. However, it's not cream, so that's okay.
  • The dish turns out better with baking powder.

Enjoy!
