Easy pumpkin pie: it will become your favorite in winter

In winter, you always want something homemade, warm, and flavorful. And this light pumpkin pie will definitely become your favorite.
For a 26-28 cm baking dish:
600 g of grated pumpkin
260 g of sugar
300-325 g of flour
175 g of light raisins
4 eggs
100 g of walnuts
100 g of vegetable oil
100 g of butter
zest of 1 orange and juice of half an orange
15-16 g of spice mix (cinnamon, ginger, anise; cloves, nutmeg and allspice can be added)
2 packs (20 g) of baking powder
salt
For the cream:
500 g cream cheese
100 g of powdered sugar (but you always want more cream!)
Let's get cooking!
The main thing is a delicious pumpkin. I always taste it, if it's sweet and flavorful, let's get to work! I peel it and grate it on a fine grater.
I pour boiling water over the raisins and drain them immediately. I chop the nuts finely with a knife.
I add melted butter and oil to the grated pumpkin, and then all the other ingredients from the list. I mix until the mixture is homogeneous. I put the mixture in a mold covered with parchment and lightly greased with oil. I put it in the oven, preheated to 175 °C. I bake for about 55 minutes.
I check the readiness with a wooden stick (no dough should remain on it) or by the temperature inside the cake (100 °C). I let the cake cool completely.
In the meantime, I mix the cream cheese with powdered sugar — the cream is ready!
You can make an even more airy buttercream: beat 100 g of butter, the juice of the second half of an orange, 130 g of powdered sugar well in a planetary mixer, and then add 500 g of cream cheese and citrus zest.
The amount of flour depends on the juiciness of the pumpkin!
I cut the cake in half, spread it with cream — and the cake is ready! It's so delicious!
