1. Soft cheeses:
- Ricotta: This Italian cheese has a similar texture and delicate creamy flavor.
- Philadelphia: More dense than mascarpone, but still can be a good substitute.
- Cream cheese: An easily available and inexpensive option, but its flavor is slightly different from mascarpone.
2. Homemade alternatives:
- From fatty sour cream: Take 1 kg of sour cream, put it in a cotton cloth bag, and hang it over a container overnight. In the morning, you will get 500 g of mascarpone-like cheese.
- From sour cream and kefir: Mix sour cream and kefir in equal proportions, salt, whisk, and hang over a container for several days.
3. For creams:
- Fat cottage cheese: Beat 300 g of cottage cheese with 100 ml of 30% cream, 100 g of powdered sugar, and 2 eggs.
- Butter: Beat 100 g of butter with 50 g of powdered sugar until smooth.
Remember:
- The flavor and texture of substitutes may differ from mascarpone.
- Beat the ingredients thoroughly to get the cream of the desired consistency.
