How to defrost vegetables correctly so as not to lose their benefits

We all know that frozen food is a real lifesaver in the kitchen. Fast, convenient, healthy... But is it really that simple?
Today we're going to talk about how to defrost frozen vegetables and berries correctly, and when not to do it. By following these simple rules, you will be able to preserve the maximum benefits and taste of frozen food, rbc.ua writes.

Here are some tips:
- Do not defrost berries and vegetables for hot drinks, compotes, jelly, and fillings. This way, you will retain the maximum amount of nutrients.
- For soups, stews, and other dishes with heat treatment, you do not need to defrost vegetables. Just take them out of the freezer before cooking.
- If you want to eat vegetables and berries raw, you must defrost them. And if the dish contains spinach, leafy greens, or corn, it is better to defrost them a little even before cooking.
There are several ways to defrost:
- Microwave: a quick and convenient method, but it loses some of the liquid.
- Refrigerator: the best way to preserve nutrients as much as possible. Put the vegetables/berries in a bowl and place them on the bottom shelf of the refrigerator a few hours before cooking.
- Room temperature: A simple method, but it is time-consuming and also leads to liquid loss.
Remember:
- Thawed vegetables and berries should be consumed within 1-2 hours.
- Do not re-freeze thawed fruits.
- Do not store vegetables and berries for longer than the recommended period.
