Delicious liver pancake cake
Many consider this dish delicious. And we all know that liver is healthy!
For one large cake (26 cm pan):
Pancakes:
600 g of chicken liver
220 g of milk
3 large eggs
120 g of fried onions
110-120 g of flour
salt, pepper
30 g of oil
Filling:
300 g of carrots
350 g of onions (+200 g of onions for pancakes)
200 g of melted cheese
~350 g of mayonnaise
Homemade mayonnaise:
2 egg yolks
330 g of odorless vegetable oil
40 g of grain mustard
60 g of sour cream
salt, pepper, apple cider vinegar or lemon juice - to your taste
Preparation:
Chop the carrots and onions and lightly fry them (stew): carrots until soft and onions until transparent and slightly discolored.
Use 120 g of onions for the liver pancakes.
Sort through the chicken liver to avoid pieces with bile and remove the connecting film.
In a food processor, beat the liver, milk, eggs, and fried onions until smooth. Add salt, pepper, flour, and finally oil. Mix everything until it is homogeneous.
Cook thin pancakes over medium heat. Make sure the edges of the pancakes are not too thin.
Chop the fried onions and carrots and add grated processed or hard cheese and mayonnaise. Divide by the number of pancakes.
Assemble the cake.
For decoration, use 3 boiled eggs and greens.
Add grain mustard and garlic to the mayonnaise.
