A Ukrainian food blogger from the YouTube channel "Sytyi Stol - Food and Recipes" shares her secret to perfect syrniki: don't add soda!
According to the blogger, baking soda, which is often used in syrniki recipes, can lead to their spreading and unpleasant dark color.
Why?
- When heated, baking soda reacts with the acidic environment of cottage cheese, which leads to the release of carbon dioxide.
- This gas loosens the syrniki, but also makes their structure loose and unstable.
- As a result, syrniki can lose their shape during frying.

An alternative to soda:
- Instead of soda, the blogger recommends adding 2 tablespoons of rice flour to the cottage cheese.
- Rice flour has a neutral taste and does not react chemically.
- Thanks to this, the cheesecakes will become denser, retain their shape, and get a pleasant cheesecake-like texture.
Additional tips:
- Use high-quality cottage cheese with a fat content of 5-9%.
- Mix the dough thoroughly to make it homogeneous.
- Do not overfill the dough with flour, otherwise the syrniki will turn out tough.
- Fry the syrniki over low heat in a non-stick frying pan.
