If the water boils too much, the top layer of peas can cook quickly, leaving the middle hard. Therefore, it is recommended to use thick-walled dishes to help maintain a stable temperature and ensure uniform cooking.
A time-honored method of cooking old peas involves thoroughly rinsing the cereal. First, let it boil over low heat, and then drain off all the water. Rinse the peas under cold water and put them back on to cook. Draining the water again is not necessary, but it is recommended because it promotes better cooking. After the second drain, rinse the peas again and cook until they are fully cooked.
