Quick alternative to Olivier: recipe for Heart salad

The main ingredient of this salad is green peas. Without it, it is impossible to imagine not only the New Year's salad "Olivier", but also many others.
"Heart" salad
500 g of beef heart (boiled)
1 large onion
300 g of boiled potatoes
200 g of homemade pickles
200 g of canned peas
salt
cold-pressed vegetable oil (according to your taste: olive, walnut, avocado, pumpkin...)
Marinade for onions:
30 ml of vegetable oil
10 g of table vinegar 9%
5 g of sugar

- Marinate the onions. Cut the onion into "feathers," mash it lightly, add salt, sugar, vegetable oil and vinegar. Leave the onions for 15 minutes.
- Cut the heart, pickles, potatoes into strips.
- Add the peas.
- Squeeze the onion lightly and add to the salad, mix.
- Season the salad with vegetable oil. Season with salt.
